Ask an average man in the street what Louisiana's most famous export might be and you could be due a litany of different answers - a man of culture might tell you it's the birth place of Jazz, a man of sophistication might tell you it's the home of Cash Money entertainment and the Hot Boys - but a man of Taste? Well he knows that the greatest export of the city is Gumbo, that melting pot of culture, flavour and cuisine, all in a single pot.

What is Gumbo? Well really truly and honestly, it's hard to define. Cajun's would tell you it's a pot of whatever happens to have been hunted that day - whether that's Ringneck's or Teal - smothered in a roux, before being braised all day in stock. A cup of potato salad might be your fixin', instead of rice, when you're out on the Bayou - however, in the city, where Creole chefs sit on the banks of Lake Pontchartrain - it might mean a lighter seafood soup, chock full of fresh oysters and crabs, thickened with a little ground sassafras root (Filé Powder) or finished with Okra.  Wherever you eat Gumbo, it tells a story of migration - both willing and forced. It showcases the ingredients of the land and techniques of those who came to call it home. Really, Gumbo is everything, it's a pot where culture and history plays out in in the same rich and intangible way it does in the towns and cities of Louisiana. It is the flavour of a State and a history. We adore everything it means to Louisiana foodways, and we've been honing our Gumbo skills for a really, really long time. Now, we're excited to finally offer Gumbo as a product for home delivery.
