Well he knows that the greatest export of the city is Gumbo, that melting pot of culture, flavour and cuisine, all in a single pot.
What is Gumbo? Well really truly and honestly, it's hard to define. Cajun's would tell you it's a pot of whatever happens to have been hunted that day - whether that's Ringneck's or Teal - smothered in a roux, before being braised all day in stock. A cup of potato salad might be your fixin', instead of rice, when you're out on the Bayou - however, in the city, where Creole chefs sit on the banks of Lake Pontchartrain - it might mean a lighter seafood soup, chock full of fresh oysters and crabs, thickened with a little ground sassafras root (Filé Powder) or finished with Okra.
Wherever you eat Gumbo, it tells a story of migration - both willing and forced. It showcases the ingredients of the land and techniques of those who came to call it home. Duck and Andouille Gumbo
Braised Duck Legs in a Rich Chocolate Coloured Roux based Gumbo, with Smoked Andouille Sausage, seasoned with our house seasoning and a rich duck and chicken stock.
Each order contains approximately 3 Portions - or 2 if you're feeling real hungry, if served alongside some rice or potato salad (not included).
The packs of Gumbo will be delivered frozen and we recommend keeping the Gumbo in your freezer until you're ready to serve, at which point, defrost and warm to piping hot.
Best served over rice or potato salad, with parsley and sliced green onions (spring onions), with a bottle of Crystal hot sauce to hand.
